Banana Nice Cream Cookie Sundae
This sweet dessert is the perfect frozen treat and couldn't be any more simple! This banana nice cream cookie sundae comes together within minutes as long as you have frozen bananas and some Simple Mills Soft Baked Cookies on hand. Which in my opinion, is always a good idea.
If you're not familiar with "nice cream" you're in your a treat! It's essentially frozen bananas that get blended into the most magical soft-serve. It's ridiculously impressive how smooth and creamy the frozen fruit gets! While you can technically just blend bananas together, adding in a heavy pour of vanilla extract and homemade or full-fat plant-based milk like almond or coconut, or even cashew cream makes the nice cream even more delicious while cutting the banana flavor and balancing out the sweetness.
To take this simple soft-serve to the next level, take a Coconut Chocolate Chip Simple Mills Soft Baked Cookie and crumble it on top. The soft cookie crumble is the perfect contrast to the smooth and creamy nice cream.
For this recipe, I used the Coconut Chocolate Chip! If you want a different flavor combination, you're in luck! Simple Mills has a variety of Soft Baked Cookie flavors, like Peanut Butter, Snickerdoodle and Chocolate Chip. All of which would make an insane sundae!

This banana nice cream recipe is simple and made with a short list of ingredients. The cookies are optional but honestly make the dessert. Sundaes are all about the toppings and soft cookie crumble is the perfect contrast to the smooth and creamy nice cream.
Even though this sundae is made with simple, wholesome ingredients, it still high in sugar. Yes, most of the sugar is natural from the bananas but it's still important to be mindful of our total sugar intake. Think of it as a delicious dairy-free ice cream option! I personally, would much rather have a bowl of banana soft serve than most plant-based ice creams or low-calorie ice creams filled with fillers or gums. It's just as satisfying and without any digestive discomfort that can come with those added ingredients.
This isn't a frozen dessert that stores well frozen. It's best eaten immediately or after chilling for 30 minutes to 1 hour more in the freezer. Any longer will require you to re-blend the mixture for it to be creamy again.
Banana Nice Cream Cookie Sundae
This banana nice cream cookie sundae comes together within minutes as long as you have frozen bananas and some Simple Mills Soft Baked Cookies on hand. It's the perfect creamy dairy-free treat and made with simple ingredients.
6 small frozen banana slices
1/4 cup chilled cashew cream or coconut milk (see notes)
1 teaspoon vanilla extract
a pinch of salt
1-2 Simple Mills Soft Baked Cookies
1/4 cup your favorite chocolate bar or chocolate chips
1/2 teaspoon coconut oil
Peel and slice 6 or more bananas. Place in a single layer on a lined baking sheet. Place in the freezer for at least 4 hours or overnight.
To make the nice cream, place the frozen bananas in a food processor fitted with the "S"-blade or high-powered blender. Pulse until small pebbles form. You may need to scrape the bowl or use the temper of the blender. This should take about 1-2 minutes.
Add the cashew cream or other milk of choice and puree or blend on high until smooth. For soft-serve style nice cream serve immediately or place in the freezer for 30 minutes to 1 hour for firmer nice cream.
Place the nice cream into a bowl and serve with crumbled Simple Mills Soft Baked Cookies and any other toppings of choice.
For a chocolate drizzle, melt 1/4 cup chocolate chips or favorite chocolate bar with 1/2 teaspoon coconut oil. Once melted drizzle on nice cream and it becomes hard like a chocolate magic shell.
Note: how rich and creamy the nice cream depends on the fat content of the plant-based milk. Full fat coconut milk or cashew cream make for the richest nice cream, but use what you have. Either way, it's still delicious.
