HOLY MOOLLLY...GUACAMOLE! Sorry, I had to!
This weekend I was at the farmers market and upon checking out one of the workers tossed 3 extremely ripe avocados in my bag! With instructions to go make some guacamole, how could I resist?
Let's Talk Guac
Guacamole is one of those dishes where no two are exactly alike, and everyone claims theirs is "the best". I will admit I do tend to fall for "the best" titles and automatically have to try someones rendition of this traditional Mexican dip. I mean how could you not!? You never know...theirs might be the best?
Along the infinite recipe comes the debate about how exactly guacamole should be made. Tomatoes? Lime juice? Spices? The list goes on and on. Some like theirs complex and spicy, while others like their very basic. And then there's the real question: smooth or chunky?
Simple guacamole recipe.
I like my guacamole pretty basic, but by that I don't mean bland. I would rather have minimal ingredients and just highlight the natural avocado with some fresh lime juice and spices. So yes, that means tomatoes you're out (except if your served on the side and I can spoon you on top myself). I like a little kick so of course I add some jalapeno. This definitely can be adjusted to your taste. I also love using fresh cilantro in my recipe, especially when it's summer and I can use it straight from my garden. Cilantro can be finicky to grow so if you don't have any on hand or don't want to purchase a bundle at the store it can be omitted. (However I highly recommend using it, it does give it such a fresh taste!
Go make this and grab some organic corn tortilla chips (along with some crunchy vegetables) and get dippin'!
A basic guacamole recipe that is bursting with flavor.
Makes 1 1/2 cups
3 medium avocados
1/4 cup finely chopped white onion
1/2 jalapeño pepper (minced)
2 tablespoons fresh lime juice
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 cracked black pepper
1/4 cup chopped cilantro (optional)
Cut the avocados in half and remove the pit.
Spoon the flesh of the avocados into a medium sized bowl. Add the onion, jalapeño, lime juice, cumin, salt and pepper. Use two forks to mash together the ingredients to the texture of your liking. Add the chopped cilantro and gently fold it into the mixture.
