Toast with Yogurt and Berries

Yogurt on toast is the next BIG thing. I completely agree with Rochelle Bilow, Associate Web Editor for Bon Appetit Magazine, in her article: Yogurt Toast: It's a Thing, and You Should Get In On It. It really is not as crazy as it sounds. I mean think about it, we use cream cheese, so why not yogurt?!

After reading this article, I couldn't help but give my own creation a whirl. I love the idea of pairing a whole grain carbohydrate with a source of fat in the morning (peanut butter banana toast is my go-to) and complimenting it with a side of plain yogurt. But they idea of combining all those components into one, GENIUS!

WHY THIS WORKS |

Combining a complex carbohydrate with fat and protein is well-balanced and will keep your blood-sugar in check and feeling satisfied into the morning. "Yogurt toast" is such a board term. It is like a blank canvas for you to use your creativity. I could never eat the same flavor combination again with all the variations that come to mind. Really the possibilities are endless! You can easily change the bread, yogurt and toppings to suit your taste preference while knowing what your eating is well-balanced and will keep you satisfied!

YOGURT TOAST | bread + yogurt + toppings

Bread: dense sprouted grain bread is what I prefer. But gluten-free, rye, sourdough all work just fine!

Yogurt: I recommend using plain Greek-style yogurt for this recipe (I love Kite Hill). It's rich, creamy and has the fat and protein that will keep you satisfied. Plain yogurt is best for this recipe since there is usually no added sugars, that way you can control the amount of added sugar and sweeten it to your taste preference.

Toppings: I love topping yogurt toast with fresh berries. Bananas, apple slices, peaches, etc. Really any fruit will do. You can also use chia jam, dried fruits, seeds or nut butters.

But think out side of the box: cucumbers, sautéed greens, roasted bell peppers, sun dried tomatoes...you get the idea!


Toast with Yogurt and Berries

Toasted bread topped with creamy almond milk yogurt and fresh berries.

Serves 1-2

Ingredients:

  • 2 slices of bread

  • 1/4 cup plain Greek-style yogurt ( I use Kite Hill)

  • 1 teaspoon honey or maple syrup

  • 1/2 cup fresh berries

  • 2 mint leaves, chopped

Instructions:

  1. Place toast in the toaster.Mix together the plain yogurt and honey and spread it on each slice of toast. Top with berries and mint or toppings of your choice.
